illy has teamed up with Bialetti, the leading brand in moka pot production, and spent six years working together on the creation of an innovative system to produce exceptional stovetop coffee. The result: illy moka and Cuor di Moka Bialetti.

illy discovered that for optimal flavour, it was important to separate out the extraction dregs, that is, the over-extracted, less desirable portion that bubbles up last when making traditional moka coffee. An innovative and patented pouring system called "controlled pouring" was then implemented. Compared with a traditional moka pot of the same size, Cuor di Moka Bialetti makes slightly less coffee because not all the water passes through the filter, but only the amount necessary for extracting the best coffee blend, totally without any extraction dregs.

Other unique features of Cuor di Moka are its "click-on" user-friendly closing system and its elegantly-designed ergonomic burn-proof silicone handle.
